Italian Meatloaf Recipe
This Italian meatloaf recipe is a nice change from ordinary meatloaf dishes. Glazed over with tomato sauce and surrounded by seasoned potatoes, this hearty dish will delight all.
This meal brings back memories of my childhood. I can remember my brothers and me coming in from playing outside on a cool autumn day, sitting down to this wonderful meal. Just makes me want to smile! Heck, it makes me want to eat!
Mamma usually served this dish during the cooler months but it can be enjoyed all year round as well. I have no doubt you and your family will enjoy it.

Italian Meatloaf with potatoes & sauce
Ingredients:
1 lb. of sirloin or ground round chop meat
2 cloves of garlic chopped
1/2 tsp of salt
1 Tbls ground black pepper
2 Tbls of fresh parsley or parsley flakes
2 eggs
1 tsp of canola oil, or vegetable oil
4-5 potatoes med. size
1 cup of plain bread crumbs
1 cup of Locatelli Pecorino Romano or parmesan grated cheese
1 8 oz. can of tomato sauce
1 8 oz. can of sweet peas
Preparation:
Peel & cut potatoes into bite size pieces and pre boil for about 20 minutes, drain and set aside. Mix in bowl chop meat, parsley, salt, pepper, eggs, chopped garlic, oil (oil keeps the meat nice and moist), bread crumbs & grated cheese. Mix thoroughly and shape into a loaf. Place in a baking pan and surround meat with potatoes. Cover meat only with tomato sauce then add 2-3 cans of water and pour over potatoes so that potatoes are partly covered. Sprinkle salt, pepper and parsley over potatoes. Put in oven 400 degrees for about 1 hour. Just about 5 minutes before you remove from oven, add 1 can of drained peas and mix with potatoes.
